Who is responsible for your data

to be defined, operator of the Obispo Cocina Rural restaurant, with its address at to be defined, is responsible for the processing of your personal data.

For any matter regarding your data, write to us at to be defined.

What data we ask for

When you book an experience: your name, your email, your phone number (if you choose to give it), how many people are coming, the date and time, and any note you wish to leave us.

When you pay: your card details are captured directly by Stripe, our payment processor. We neither see nor store them: from Stripe we only receive the payment confirmation, with the amount, the date and a reference number.

Sensitive data: we do not ask for it. If your note tells us about an allergy or a health or mobility condition, we use it solely to prepare your table and the experience, and we do not share it with anyone.

When you browse: the site uses no advertising or analytics cookies. It only uses a technical session cookie, needed to protect the booking form against fake submissions. For security, the server receives the IP address each request comes from.

What we use it for

To handle your booking, and only for that:

  • to record and confirm your place in the experience;
  • to take the payment, when the experience is paid online;
  • to email you the confirmation and let you know if anything changes;
  • to handle cancellations, changes and questions;
  • to meet our tax and legal obligations.

All of them are necessary to provide the service. We do not use your data for advertising, and we do not sell it.

Who we share it with

  • Stripe, which processes the payment: it receives your email and the payment details, and handles your card data under its privacy policy.
  • Resend, which sends the emails about your booking: it receives your email address and the content of those messages (its privacy policy).
  • The provider of the server hosting the site and its database, which stores them on our behalf.

Stripe and Resend may process your data outside Mexico. We may also hand it over to an authority when the law requires us to.

How long we keep it

For as long as it is needed to handle your booking and to meet our tax and legal obligations. After that it is blocked and deleted.

Your rights

You can access your data, ask us to correct it, delete it or object to our using it (the ARCO rights under Mexican law), and you can also withdraw your consent. Write to us at to be defined with:

  • your name and a way to reply to you;
  • an ID or, if someone requests it on your behalf, proof of their representation;
  • which data and which right you wish to exercise, clearly explained;
  • any document that helps us locate your data.

We reply within 20 days at most and, if applicable, put it into effect within the following 15 days. It is free of charge. If you are not satisfied with our reply, you can turn to the Secretaría Anticorrupción y Buen Gobierno, the Mexican authority in charge.
